Highlights
HIGHLIGHT DINNER WITH GUEST CHEF Max Paganoni, renowned chef and award winning owner of Max’s Restaurant at the Red Hill Estate will be our own private chef. Max will prepare a three course dinner in our own kitchen and we will be served dishes that have made Max’s Restaurant one of the Peninsula’s most famous dining experiences. Max’s influences come from the local orchards and producers to provide seasonal specialities on his menus. He also draws inspiration from annual trips to Europe, in particular Sicily and Tuscany ~ this dinner will be a very special event.
WINERIES Foxy’s Hangout : Bottling and blending sparkling wine, and tasting. Nazaaray : Pinot masterclass with an awarding winning winemaker. Red Hill Eatate : Chardonnay
CHEESE The cheese maker from one of the Peninsula’s most exciting farmhouse goat’s cheese dairies Main Ridge Dairy will give us a tour of the milk production and cheese making operation. We will have a tasting of these award winning cheeses and the opportunity to buy some product at the dairy.
OLIVE OIL Olive oil production is a growing industry on the Peninsula and the Green Olive Estate produce particularly high quality oil. We will taste a range of oils and learn about colour, texture, viscosity, the production and terrior characteristics.
CHOCOLATE The Peninsula Chocolates is becoming an icon in the village of Flinders – handmade on the premises and made from the highest quality Belgian chocolate. The production room can be viewed from the store and the luscious and extensive range of moulded and shaped chocolates is mouth-watering. We will taste a number of samples from Peninsula Chocolate’s range including their award winning Lime Ganache.
ACCOMMODATION Luxury self-contained accommodation with beautifully decorated and furnished bedrooms, each with ensuite bathroom. The house has a fully equipped kitchen, beautiful dining room and is surrounded by a large vegetable garden, manicured outdoor areas and herb garden. The village of Red Hill is within walking distance. The house is a local historic building, beautifully renovated with an eclectic mix of antiques and luxury fittings.
Itinerary
Friday Night - Arrival by own arrangements between 6.00 -7.00pm. Settle into accommodation and enjoy pre-dinner welcome drinks. Casual dinner in-house prepared by Pauline. This will be very casual as our group arrives in time for a glass of sparkling wine and then followed by a selection of dishes made from locally grown produce and finishing with fruit and Red Hill cheeses.
Saturday - After a casual breakfast of fresh fruit, local pastries and bread, freshly made coffee the minibus will pick us up to start the day’s touring and tasting.
First off will be a guided tour of a goat’s cheese dairy, the cheese production and finishing with a tasting, then it's on to do a tasting of estate grown and pressed olive oil.
A mid-morning sparkling wine tasting will be in order next, at Foxy’s Hangout, as well as the opportunity to see the final stages of bottling. Perhaps you will even have the chance to create your own sparkling blend to take home.
A light and delicious antipasti lunch will be prepared by Red Hill Estate restaurant and served ‘al fresco’ overlooking one of the Peninsula’s most spectacular views of Westernport Bay, to give us a short break from touring and tasting.
Following lunch we will undertake a Pinot Noir ‘Masterclass’ with the award winning winemaker from Nazaaray, who will give us a structured tasting on the estate’s Pinot Noir vintages. The vineyard is a small holding but produces some of the area’s best examples of Pinot.
A short drive into the township of Flinders for tasting of exquisite handmade chocolates, and a short break for a coffee and shopping.
Later we will return to our accommodation to relax, perhaps a walk into nearby Red Hill or a sit in the garden.
Our chef will arrive late in the afternoon to start preparation for our delicious dinner. We will have pre-dinner drinks around 7.00pm by the fire and then followed by a candlelit dinner in the beautiful dining room of our accommodation. A beautiful end to a full and fun day.
Sunday - A later start to the day with brunch at 10.00am. Optional activities can be arranged for the morning including golf (there are many world class golf courses on the Peninsula), luxury spa treatments or a walk along the beach. Depart late morning and make your own way back home after a wonderful weekend of food and wine, and fun
